Tumeric Veggie Parcels

Fried food doesn't have to be heavy tasting. These are light and packs a punch when it comes to flavour.



Prep your ingredients:


  • 2 cups of mixed diced frozen veggies (carrots, corn, peas)

  • 1 king oyster mushroom, finely diced (optional)

  • 1 red onion, finely diced

  • 2 tablespoons of turmeric powder

  • 1 teaspoon of garlic powder

  • 1 teaspoon of ginger powder

  • 2 tablespoons of corn starch

  • 1 egg

  • Spring roll wrappers x 5, about 15cm x 15cm in size

  • Salt and pepper to taste

  • Oil for deep frying

  • Spring onions for garnish, finely chopped


Steps:


  1. Get a large wok or pot filled with deep frying oil and get it preheated.

  2. Mix the turmeric powder with the frozen mixed veggies, onions, and mushroom (if using), along with the corn starch, ginger powder, garlic powder and egg. Season with a good pinch of salt and pepper too. Combine well.

  3. Slice all your spring roll wrappers in half so you get rectangles. Put about a tablespoon or so of filling on one end of the wrapper and fold in the sides to prevent it from escaping, and fold it 1-2 times to seal so you get a pouch. Use egg wash or water to seal the seams.

  4. Get a plate or tray with a kitchen paper towel on top. Set aside. Fry the veggie parcels for 2-3 minutes or until nice and golden brown. Immediately remove and transfer to the plate to drain access oil on the kitchen paper.

  5. Serve immediately on a clean plate and optionally sprinkle spring onions and flaky salt for garnish. Serve with your favourite dipping sauce.
