Stupid Easy Homemade Biscotti

These are the healthiest cookies on the planet.


Okay they're not technically healthy, but now that I got your attention, here's how to make these snappy oblong shaped biscuits that you can dunk in your morning coffee.

Did you know? : Biscotti means twice baked in Italian.



Chapter 1: Ingredients


Yield: about 60 cookies

  • 112g of unsalted butter, softened (NOT MELTED)

  • 300g of granulated sugar

  • 4 eggs

  • 480g of AP flour

  • 2 tbs of vanilla extract

  • 2 ts of baking powder

  • A pinch of salt to taste

  • 100g of cranberries, roughly chopped

  • 100g of almonds, roughly chopped


Chapter 2: Steps

  1. Preheat your oven to 180°C and line your baking trays with parchment paper.

  2. Beat your butter and sugar with a hand mixer or stand mixer and slowly add in your eggs, one egg at a time. Beat until smooth and airy.

  3. Add in your vanilla extract, cranberries and almonds and mix until fully combined.

  4. Add in your flour and mix until you form a rough dough. It should not be wet so add in more or less flour if necessary.

  5. Depending on the size of your oven or baking sheets, separate the dough into 2-3 pieces and roll each of them into a flat oblong shape that is roughly 2cm thick.

  6. Bake them for 25-30 minutes and cool completely.

  7. Once cooled and safe to touch, slice them into your desired thickness and arrange them cut side up on the tray. Bake them again for 15-20 minutes again on each side or until fully dry and toasted. The thicker your slices, the longer it will take so experimentation is key.

  8. Serve with your favourite drink and enjoy!
