Spiced Tofu and Asparagus Medley

If you've ever wanted a super quick lunch or dinner fix that is also healthy, this is it.


Simple ingredients, simple cooking and done in 15 minutes, or less! Well, excluding washing up, but l promise there's not a lot of clean.



Prep your ingredients:


  • 250g of asparagus, bottom woody parts removed.

  • 4pcs of firm tofu, about 5x5cm per block, sliced into 0.5cm strips.

  • 1 teaspoon of paprika

  • 1 teaspoon of garlic power (optional)

  • 1 teaspoon of curry powder

  • 250-300g of cherry tomatoes, halved.

  • 4 tablespoons of Greek yoghurt.

  • 100g of hazelnuts, roughly chopped.

  • Salt and pepper to taste

  • Oil for pan frying



Steps:

  1. In a bowl, toss in your tofu slices with the paprika, curry powder, salt, pepper, a bit of oil, and the garlic power, if using. Evenly coat and set aside.

  2. In a pre-heated pan on medium-high heat, add your asparagus. Fry without oil for about 3-5 minutes, checking in between to see if anything is burning too quickly. You want them to get a bit of colour.

  3. At the same time, fry your tofu slices in another pan for about 3 minutes each side on medium-high heat. If you do not have another pan, fry the tofu after your asparagus is done.

  4. To serve, add 2 tablespoons of Greek yoghurt on each plate. Spread evenly to form a nice layer. Add the asparagus neatly, and then top with the crispy tofu on the top. Sprinkle the cherry tomatoes and chopped hazelnuts.

  5. Optionally, drizzle some olive oil before serving.
