Lotus Biscoff Spread Molten Chocolate Lava Cake!



V-Day is coming up, and what better way to spend it than making an exquisite chocolate molten lava cake for your partner? (or yourself, no judgement here) Even better, this lava cake has a Lotus Biscoff spread surprise in it for a nice little twist!



Ingredients (Lava)

Equal parts of heavy cream and chocolate (I used about 3 tablespoons each)

A pinch of salt

Lotus Biscoff spread (however much you like, c'mon it's Valentine's Day)

Steps:



  1. Make the lava first. It's basically a chocolate ganache. Gently heat up the heavy cream on the stove or in a microwave and pour it over the chocolate. Add in some Lotus Biscoff spread but do not completely mix it in. Let it ripple throughout. Whack this in the fridge to harden for about 15 minutes.

  2. Melt the rest of your chocolate along with the butter in a large heat-safe bowl.

  3. Crack the eggs in another bowl and whisk them up.

  4. Pour the beaten eggs into the chocolate and butter mixture and mix well. Make sure the the bowl is off the heat otherwise the eggs will cook or curdle.

  5. Sift in the flour, and add in the sugar, instant coffee, vanilla extract and salt. Mix well.

  6. Rub your ramakins with butter or spray them with cooking spray. Then, lightly dust them with cocoa powder or powdered sugar.

  7. Take your chocolate Biscoff ganache out of the fridge. It should be firm at this point.

  8. Pour or scoop one layer of cake batter into the ramakins, scoop one small ball of ganache onto it (this is the lava), and top it off with another layer of cake batter.

  9. Bake the lava cakes at 190°C for 14 minutes.

  10. To serve, place a plate on top of the ramakin and hold everything firmly. Quickly but gently, turn the whole thing over and lightly tap the ramakin. The lava cake should come out with ease.

  11. Optionally, dust some extra powdered sugar or cocoa powder on top and add a mint leaf for garnish. Serve immediately and enjoy.

Note:


  1. You can use chocolate chips for this. There's nothing wrong with that.

  2. If you don't have a partner, you can eat this alone, don't be guilty about it.
