Easy AF Apple Pancakes (Inspired by Oladi)

Let's be real here, pancakes can get boring, especially if you're too lazy to make them when you wake up at 11am and you just randomly whack in milk, flour and eggs into a pan and call it a day.
Let's give pancakes a fresh fruity twist, with a tang from yoghurt.

Give your apples a wash and use a sharp knife to dice them into small cubes.
Crack the eggs in a large bowl, and toss in all the other ingredients in the ingredient list. Do not over mix this overwise your pancakes will become tough.
Drop a knob of butter into a pan that is on medium heat, and fry the pancake batter as you would for normal pancakes. About 2-3 minutes on each side depending on how hot the pan is, but the general rule is to flip when you start seeing bubbles on the top of the pancakes.
Stack them high on a plate and serve with your topping of choice.
Notes:
Traditional Oladi is made using buckwheat flour instead of all purpose flour, and kefir (fermented milk) instead of Greek yoghurt.
Optionally, you can peel the apples before dicing them.
