Homemade Dehydrated Citrus Without a Dehydrator

Updated: Jun 13, 2022

Recipe by: Shaun Yoong

Ingredients:

It only takes 2 ingredients...

  • Citrus of choice (Lemons/oranges/limes/grapefruit/etc.)

  • A damn lot of patience

Steps:

  1. Preheat your oven to its lowest setting. Okay, maybe not its lowest because that'll be 0°C. About 75-90°C.

  2. Slice your citrus into about 2-3mm thick slices. It's virtually impossible to cut evenly thin slices with a knife, though having a sharp knife helps tremendously. If you have a mandolin, this is a smart time to use it, but if you don't, a sharp knife will do.

  3. Place the citrus slices on a baking tray lined with baking paper (yes, they will stick if you forgo the baking paper) and dehydrate them in the oven until completely dry. (See tips)

  4. Store them in an airtight container. If all the moisture is extracted out from the fruit, these will last from weeks to months.

Tips:

  1. The time is takes to dehydrate your fruit depends on the temperature and the size of the fruit. This can range from 4-5 hours for small fruit like limes, to 6-8 hours for medium sized ones like lemons, to over 10 hours for big ones like grapefruit.

  2. Grapefruit and oranges look the prettiest when they are dehydrated IMO. Lemons and especially limes, look pretty ugly. Just saying.

  3. You can use these in various ways. They make perfect decorations in your home or on gifts, add them to your baked goods or tea, use them as potpourri, the sky is the limit.
